Creamed Rhubarb Pie recipe

Ingredients:

2 cups of rhubarb.
1 cup of sugar.
2 tablespoons of butter.
3 tablespoons of water.
2 medium eggs.
1 heaped tablespoon of flour.
1 pie shell, baked.

Directions:

Cut 2 cups of rhubarb and cover with boiling water. Allow to stand for 5 minutes.

Drain the rhubarb and mix in the sugar, butter, water and egg yolks.

Cook until creamy and thick.

Pour into baked shell and cover with meringue made from the two egg whites.

Bake at 350°F (180°C) for about 15 minutes until the meringue peaks are golden brown.

Allow the pie to cool before putting in the filling then topping with meringue.
